I keep a bottle on the counter just for salads because it's that good. The full-bodied taste is rich without being heavy, and you can tell it was pressed from something special.
I’ve been through a lot of olive oils, but this one tastes like the olives were picked yesterday—that full-bodied, almost peppery kick is exactly what I wanted for dipping bread. It’s pricey, but a little goes a long way when I’m finishing a salad or roasting veggies.
The first time I drizzled this over a simple salad, I actually stopped mid-bite—it's that full-bodied and rich, with a peppery finish that lingers just right. You can tell it's hand-harvested early because the flavor tastes so fresh and alive, not like the flat stuff from the supermarket.
