Parasol Champagne Vinegar

The orange really comes through in the aroma—it’s bright and citrusy, not sharp like most vinegars I’ve tried. I used it in a simple vinaigrette and the double fermentation gives it a smooth, almost fruity finish that’s perfect for salads.
